Ingredients

For the Crust:

  • 1 ½ cups crushed vegan Oreos (with filling)

  • ¼ cup melted vegan butter

For the Filling:

  • 400 ml vegan whipping cream (pre-whipped to soft peaks)

  • 1 ½ cups soaked cashews (soaked for at least 4 hours or overnight, then drained)

  • 1 can (400 ml) full-fat coconut cream (use only the thick cream portion)

  • 1 cup crushed vegan Oreos (without the filling)

  • 2–3 tbsp maple syrup (or sweetener of choice)

  • 1 tsp vanilla extract

For the Topping:

  • Crushed vegan Oreos

  • Oreo halves for decoration

  • A drizzle of melted vegan dark chocolate (optional)


Instructions

  1. Prepare the Crust:

    • In a mixing bowl, combine the crushed vegan Oreos and melted vegan butter. Mix until the crumbs stick together when pressed.

    • Press the crust mixture evenly into the base of a springform pan to create a firm and even layer.

    • Refrigerate while preparing the filling.

  2. Make the Filling:

    • If using vegan whipping cream powder, prepare it according to the package instructions until soft peaks form.

    • In a blender or food processor, combine the soaked cashews, thick coconut cream, vanilla extract, and maple syrup. Blend until completely smooth and creamy.

    • Gently fold the whipped vegan cream into the cashew mixture, ensuring the texture remains light and airy.

    • Fold in the crushed vegan Oreos to create a cookies-and-cream effect.

    • Pour the filling over the prepared Oreo crust, smoothing the surface with a spatula.

  3. Chill the Cheesecake:

    • Place the cheesecake in the refrigerator for at least 4 hours, or overnight for best results, until fully set.

  4. Decorate the Cheesecake:

    • Once set, top the cheesecake with crushed vegan Oreos and decorate the edges with Oreo halves for an elegant finish.

    • Drizzle melted vegan dark chocolate over the top for an extra touch of indulgence (optional).

  5. Serve and Enjoy:

    • Slice carefully and serve chilled, enjoying the creamy cookies-and-cream goodness with every bite.
